What do you call a brew made with honey, malt, fruit, and spices?
On Sunday I decided to make another batch of mead, and rack three batches that have been fermenting for a few months. I didn't want to make another mead, so I decided to spice things up a bit and make a variant of mead such as pyment, braggot, metheglin, cyser, etc... I couldn't settle on one particular variant, so I just combined a few together. With some spare, light malt extract, apples, and spices I added about 14.5 lbs of honey. Before adding the honey, I boiled the malt, apples, and spices for about 20 minutes. The brew had a rich aroma which was very pleasing. Adding the honey only made it better.
After the brew was finished, carboyed, and pitched I racked two of my sweet meads onto oak chips, and then racked the third to a new carboy. All in all, a busy but enjoyable day!
